Perfect Roast Chicken with Vegetable Gravy and LeCreuset Giveaway - Health Starts in the Kitchen I’ve day dreamed of owning a Le Creuset Dutch Oven for as long as I’ve known how to cook. It’s one of those iconic pieces that every good cook must have in their kitchen.  Needless to say, finally being a proud owner of a Le Creuset Dutch Oven makes me feel like I’ve officially arrived on the foodie-scene. And I’m even more excited to be sharing this amazing gift with one lucky reader! Why Le Creuset? Le Creuset Dutch Oven are made in France the same way they’ve been made since 1925. Each oven is hand-cast into a sand mold. After casting, each mold is destroyed and then each oven is polished and sanded by hand to be prepared for enameling. Le Creuset Dutch Oven Features:

Perfect Roast Chicken with Vegetable Gravy & LeCreuset Giveaway

Total Time:3 hrs 10 mins

Ingredients

  • 1 whole chicken Pasture Raised Chicken, 3-5 pounds
  • 2 cups Cauliflower chopped
  • 2 large carrots peeled and chopped
  • 2 ribs celery chopped
  • 1 large Onion chopped
  • 2 cloves Garlic peeled and chopped
  • Sea Salt

Instructions

  • Preheat oven to 350
  • Place Cauliflower in the bottom of your dutch oven and place chicken on top
  • Surround chicken with remaining vegetables
  • Season Chicken/Veggies liberally with sea salt & pepper
  • Cover with lid and bake 2-3 hours at 350, or until your chicken is cooked through and falling apart.
  • Remove chicken from dutch oven, transfer to a plate and set aside
  • Place cooked vegetables and drippings in your blender, puree until smooth. Add water as needed to make the perfect gravy for your family. Season with additional salt and pepper to taste.
  • Return chicken to the dutch oven and boil to brown/crisp the skin
  • Serve Roasted Chicken with Vegetable Gravy
