I get so excited for the first of the year, I love the idea of a fresh start and setting intentions for the year ahead. I especially LOVE buckling down for a New Year’s kick start, which for us this year (2018) includes having a low-carb diet and lots of intermittent fasting. The biggest mistake people make is getting hung up on the things they leave behind when they embark on a new year’s resolution, when they should be focusing on all the awesomeness they get to enjoy, like my Low-Carb Spinach and Feta Quesadilla!

Let me be honest with you (because you know I always am, it’s like totally my ‘thing’). I’ve been enjoying Spinach and Feta Quesadillas for YEARS. Like before I got married, that kind of long time. (We’re celebrating our 15th wedding anniversary next month, yikes!)  I can’t take credit for this ‘recipe’ since I first had a “Popeye Quesadilla” when I was a teenager at an Arts Festival back in the 90’s.

While I’ve never been a vegetarian per se, I’ve always LOVED vegetables and from a young age, took great pride in my love of all things veggie.  I distinctly remember feeling super cool when I ordered the vegetarian option…

It was the 90’s, I was like 16 or 17 and already a foodie.

I refuse to apologize.

Anyways. As much as I’ve enjoyed Spinach and Feta Quesadillas over the years, I’ve had to avoid them because the tortillas were too high in carbs (true story) and even when I tried to use other types of tortillas, it just wasn’t the same.

I never in a million years would have thought that I would enjoy this deliciousness and it be low-carb, too!!

You are probably just as skeptical as I was…… right??

I’ve been burned by ‘low-carb’ substitutes so many times that I rarely give them a shot anymore. Hence why I didn’t try these sooner.

And they are so easy to make! Just smear a tortilla with pesto (store bought is ok!), top with sautéed spinach and mushrooms, layer on the cheeses, then sandwich it all with another tortilla on top!

Just give your quesadilla a little crisp in your favorite cast iron skillet with some butter – you know, grilled cheese style; melting the butter first, bathing the quesadilla in the lovely fats until lightly brown, then flip.

All this low-carb deliciousness is making me hungry for another Low-Carb Spinach and Feta Quesadilla… you too??

The spinach and mushroom sauté is smothered in melted cheese, with the deliciousness of pesto bringing it all together inside 2 crispy LOW-CARB tortillas.

Serve up my Low-Carb Spinach and Feta Quesadilla with your favorite pizza or spaghetti sauce, then do your best to just eat one quesadilla.

I fail at that part, every time.

But at just 6 net carbs per tortilla, who cares!??!?!?! Right?

Ingredients

For the Sautéed Spinach and Mushrooms:

For the Quesadillas:

Instructions

  • For the Sautéed Spinach and Mushrooms: In a skillet over medium heat, melt butter. Add garlic and mushrooms, season with sea salt and squeeze in the juice of 1 lemon wedge (this prevents mushrooms from turning black). Saute 3-5 minutes or until mushrooms are cooked through. Then add spinach and mix. Cook just until spinach is wilted, remove from heat.
  • Assemble your quesadilla by spreading pesto on one side of a tortilla, then top with sautéed spinach/mushrooms and cheese. Place another tortilla on top to make a quesadilla.
  • Fry your quesadilla in butter for 1-2 minutes per side over medium heat, or until lightly brown and cheese is melted.
  • Transfer to a plate and cut into pieces, serve with pizza sauce, if desired.

  3. Did you delete my comment????? That was a fair question that was asked very diplomatically. If you did delete it that just shows that you’re more interested in making money from sponsors than the truth and being unbiased to your followers. I have 1.4 million followers that I would never do that to. You were one of my favorite bloggers Hayley.

Holly – if you are someone with influence and a large reach then I’m sure that you can appreciate putting down a brand’s product isn’t cool and out of respect for my partnership with them I simply will not allow it. And to be honest I don’t need anyone policing my voice here. I’ve been someone who looked down my nose at others who don’t live up to my own standards then realized that type of mindset only divides people looking for better health. After nearly 15 years striving for perfection from both myself and everyone else, I realized that perhaps the best way that I can lend my voice is to be more helpful to those who are where I was years ago, looking for an option to keep moving forward, like in this case.

      Let me give you an example. Let’s say you’re Type 2 diabetic and NEED to eat a low carb diet because your life seriously depends on it and it’s all new/confusing, your struggling. I’d rather you eat these tortillas since they are lower in carbs and without a doubt do less harm than their high-carb counterpart…. I’m PROUD to support brands who offer BETTER options for people who need them.

      I occasionally post a vegan or vegetarian recipe, which isn’t a lifestyle I agree with, but it doesn’t mean that my culinary skills can’t still be a resource for those who do.

      I will not apologize for this post or for not sharing your original comment. We all are on very personal journeys, I’d certainly not want to have someone who can benefit from this recipe be subject to the parameters of a healthy diet.

      It’s a low carb option, for those who choose to or need to reduce carbs and that’s their dietary focus. My own personal journey started eating low carb, with lots of artificial sweeteners and eating low-carb junk food. That one dietary experience is what started my research and passion, I can’t in good faith put down someone else who’s in my very own position. (back in 1999) If it wasn’t for products like these and realizing how carbs impact my body, I wouldn’t be doing what I love professionally.

      I sincerely wish you the very best and hope that you can understand that we all need to stand together and empower people no matter where they are in their journey and not deter their efforts with our own strictness.
