I’m sure many of you are thinking that there is no way your family will eat LIVER – but with these meatballs, if you don’t tell them – they’ll never know! What’s so “Super” about Liver?? Liver is the most commonly consumed organ meat in the US—and for good reason: it’s one of the most nutrient-dense foods in existence. Liver is held sacred by many African tribes, and practically every cuisine has liver specialties. It simply contains more nutrients, gram for gram, than any other food:17

  • Liver is nature’s most concentrated source of vitamin A (retinol)
  • It contains an abundant, highly usable form of iron

It’s really simple to trick yourself and your family into enjoying liver as a regular part of their diet..  just puree liver (chicken, beef, pork, etc) in your food processor until smooth and add it into this flavorful meatball mixture! Ingredients

Instructions

  • Preheat oven to 350 degrees F
  • Over medium heat, sauté onions, garlic & mushrooms in butter until soft, remove from heat and allow to cool
  • In your food processor, puree liver until smooth
  • Combine everything together in a large bowl, using your hands to mix well.
  • Shape meat mixture into meatballs (any size you prefer, we use this scooper)
  • Bake meatballs until cooked all the way through or an internal temperature of 160 degrees F (about 30 minutes) Rotating them a few times during baking so they don't develop flat spots.
  • Serve meatballs as desired (with or without tomato sauce)
  • Enjoy!

    1. I find ground dark meat chicken or turkey subs well for pork in many recipes; Although beef is easier to find. A higher fat beef or ground brisket would also sub in with good results.

  1. I have chicken liver and ground chicken, do you think it would taste find if I just use lean ground chicken instead of a beef/pork combo?

    1. I honestly don’t know. I’ve never used ground chicken and when I use ground turkey I tend to find it too lean/dry unless it’s paried with additional vegetables or added fat. Perhaps you would be better off making my Turkey Meatloaf Cupcakes as meatballs, adding chicken liver to the mix since this recipe works great with non-lean proteins.

  2. If I wanted to freeze some of these would I freeze them before they were cooked or after? ?And then how would I defrost/cook them?

  3. I’m going to try this without parmesan… Do you think that would work? My breastfeeding baby is allergic to dairy, so we have to avoid it.
