Paleo Oyster Chowder

Ingredients
1/2
cup
chopped Carrot
1/2
cup
Onion
1/2
cup
chopped Celery
2
cup
Organic Coconut Cream (canned)
or heavy cream
1
pint
fresh Oysters
with liquid
2
tablespoons
Ghee
or butter
1
teaspoon
Organic Celery Sea Salt
1/8
teaspoon
White Pepper
1/8
teaspoon
Paprika
2
tablespoons
Potato Starch
Breaded Oysters
for garnish
Instructions
In a sauce pan over medium heat, sauté onions, celery & carrots in butter for about 5 minutes, or until the carrots are almost cooked
Season onions, celery & carrots with celery salt, white pepper & paprika, stir to combine
Add oysters with liquid and cook until the edges of the oysters begin to curl
Whisk together potato starch and half & half until blended smooth then add to your oysters & veggies
Reduce heat to low (almost simmering) and cook for about 5 minutes
Garnish with several crispy fried oysters on the top of each bowl
