Combine all meatball ingredients together and mix well. Let sit for 5 minutes.
Divide meatball mixture into 24 equal portions. Roll into a ball around a piece of cheese, covering completely.
Bake at 350 for 20-25 minutes or just until the cheese is melted. (it's normal that I little might seep out)
Remove from oven and lightly toss in additional hot sauce, if desired. The meatballs are flavor packed without the extra sauce, so it's not necessary. Serve with blue cheese dressing for dipping and celery sticks.
