Canadian Bacon and Spinach Fried Rice

Canadian Bacon

tablespoons
Butter (or ghee)
divided

cups
fresh spinach
5 ounce container pre-washed
2
cups
cooked rice
Sea Salt
to taste
Instructions
Thinly slice Canadian Bacon (julienne) and fry in 1 tablespoon of butter over medium heat until lightly brown and with crispy edges.
Reduce heat to low, add spinach and toss to wilt then add rice.
Stir to combine and cook only long enough to heat rice. Add additional butter then remove from heat season to taste.
Serve with grated raw cheddar or parmesan cheese, if desired. Enjoy!
