Ingredients
For the Chicken & vegetable gravy
1 1/2poundsboneless skinless chickenthighs or breasts
Combine flour & seasonings and toss chicken to coat. Chicken can be cut into bite sized pieces or left in larger servings, as desired.
In a dutch oven or other heavy bottomed pot, brown chicken in ghee over medium high heat. It does not have to be cooked through.
Add onion, celery and carrots. Cook 1-2 minutes. Add wine, cook another 2-3 minutes to evaporate off alcohol.
Add cream cheese and stir to melt then add broth.
Add peas and green beans. Reduce heat to low.
Make your dumplings; Combine flour, baking powder and seasonings.
Using your fingers, add butter. Smooshing it into the flour, like a biscuit dough until a fine crumble.
Mix in milk until a rough dough is formed.
Bring gravy to a low simmer, drop dumplings by heaping 2 tablespoon scoops, yield will be roughly 12. They can be made any size desired. It's ok if they touch.
Cover, allow to steam in the gravy for 10 minutes before serving.
