From start to finish, you need less than 30 minutes to whip up a batch of my Easy Keto Broccoli Cheese Soup with Chicken. Thick, creamy and delicious, you'll never guess that this low carb soup has only 9g net carbs per serving!
In a medium sauce pan, over medium heat saute chicken in ghee. Season with sea salt, white pepper and dry mustard. Cook 3-5 mintues or until no longer pink.
Add garlic and onions. Saute 2-3 minutes.
Add cream cheese, stir to melt. Whisk in broth, bring to a simmer.
Add broccoli, cointune to simmer for a 3-5 mintues or until the broccoli is cooked to your liking.
Add cheese, stir to combine. All the cheese can be added or some can be reserved to serve on indivudual bowls, as desired.
OPTIONAL For a THICKER soup: Whisk glucomannan with a little cool water utnil smooth. Add into hot soup, simmer for a few mintues to thicken.
