The Best Keto Mashed Cauliflower is my favorite way to conquer comfort food cravings when following a low-carb diet. My secret is using frozen cauliflower and cream cheese for the ultimate creamy and delicious side dish, that no one will guess isn't potatoes!
Place frozen caulifwer into your stemer insert. Place on top of the boiling water and cover with a lid. Steam for 7-9 mintues or until the cauliflower is VERY soft and tender.
Transfer hot cauliflower to your food processor along with cream cheese, sea salt and black pepper. Puree for 1 mintue.
Add heavy cream, adjust seasonings to taste and puree for 1 additional mintue.
Serve immediately while still hot, top with butter if desired. Or you can transfer your finished cauliflower mash to an oven proof dish and reheated as needed.
