A cheesy baked egg frittata filled with onions, peppers, and breakfast sausage; topped with melted mozzarella cheese and pepperoni; and served with pizza sauce on the side. With my Pizza Frittata Recipe, you can enjoy all the flavors of pizza you crave (even for breakfast!!) —only made healthier with this low-carb Frittata!
To get started, fry the sausage in your cast iron or other 10 inch oven-proof skillet over medium heat. Add a little butter, if needed, to prevent the sausage from sticking and/or if it's not very fatty. Once the sausage is cooked through, toss in 1 cup of chopped vegetables (I used 1/3 cup each of mushrooms, onions, and green peppers, but any combination will work great. I would add olives, too, but my husband hates olives.)
Sauté the veggies with the sausage for 2-3 minutes, then sprinkle with shredded Cheddar cheese.
Beat together eggs, heavy cream, and seasonings. Pour the egg mixture over top of the sausage, vegetables, and cheese.
Allow to cook on the stove for 3-5 minutes or until the edges of the eggs have begun to set. Transfer your (uncovered) keto frittata to a preheated oven and bake at 375 for 15 minutes or until eggs are set in the center.
