The Best Sautéed Maitake Mushroom Recipe (Hen of the Woods)
Sautéed maitake mushrooms need only butter, lemon, salt and pepper. This simple Hen of the Woods recipe delivers crisp, golden edges and rich, savory flavor in about 15 minutes.
Clean the maitake mushrooms. Brush away loose dirt and debris with a damp paper towel. If they need a quick rinse, use cold water, drain in a salad spinner and pat thoroughly dry. Tear the cluster into similar-size pieces so they cook evenly.
Heat a large skillet over medium-high heat. Add the butter, then arrange the maitake pieces in a loose, even layer. Avoid crowding the pan; cook in two batches if necessary.
Squeeze the lemon wedge over the raw mushrooms in the skillet.
