I’ve eating this flavorful combination in countless ways. There’s something so magical about combing Spinach, Tomatoes and Feta Cheese! And today we’re enjoying it in an Easy Italian Chicken Sausage and Cheese Tortellini Skillet meal.
I am excited to share this collaborate with al fresco and create some deliciousness with new-to-me ingredient. #Cookwithalfresco And before you ask, Yes!! Chicken sausage is a thing and it’s seriously good.
With al fresco, you’ll never have to choose between food that’s fast, delicious and good for you. They insist on all three, always! Which makes al fresco a brand I knew I could be proud to feature in a recipe for you.
I picked up a couple packs of their Sweet Italian Style Chicken Sausage on my very first trip to the grocery store in several weeks during 2020 shelter-in-place. And I honestly missed grocery shopping more than I realized.
While al fresco’s Sweet Italian Style Chicken Sausage is really delicious on it’s own; pre-cooked just needs heated up… it’s also so complimentary to use in dishes, like my Easy Italian Chicken Sausage and Cheese Tortellini Skillet!
To get started just give your sausage a quick slice and brown it in a skillet with olive oil.
Then add tomatoes and spinach, once they are wilted gently toss in your cooked tortellini!
I’m drooling and I literally just finished eating a giant bowl of this deliciousness… I guess I’m going to need seconds!
And don’t forget the crumbled feta cheese!
From fridge to table, this meal comes together in less than 15 minutes!

Easy Italian Chicken Sausage and Cheese Tortellini Skillet
- Prepare tortellini as directed on the package until al dente and rinse with cool water. Set aside.
- In a large skillet over medium heat, lightly brown sausage in olive oil with garlic and a pinch crushed red pepper.
- Add cherry tomotoes and spinach. Cook until wilted, 2-3 mintues.
- Gently toss in cooked tortellini. Season to taste with salt and pepper.
- Serve topped with feta cheese, enjoy!
