Sausage Tortellini Soup with Ramp Greens

One of the best parts, as well as the most challenging, is working with a fridge full of our favorite foods paired along with surplus from a project I’m working on.

That’s how this soup happened.

And I’m not mad about it.

I didn’t specifically set out to make this soup, it was simply a way to use the ingredients that were in the fridge that needed used up like my weekly batch of homemade chicken bone broth and extras from my Italian Chicken Sausage with Tortellini Skillet recipe.

Oh yeah and since it’s April, we had an abundance of wild foraged ramp greens, too!

What are Ramps?

For those of you who aren’t familiar, ramps are a wild onion/garlic/leek that grows locally. They have a strong flavor that has a cult following. My husband has been obsessed with them his entire life and he eats bushels of them every spring.

In some areas there are issues with over harvesting, thus it can be advisable to leave the bulbs and only harvest the leaves, making recipes like this soup PERFECT for everyone to enjoy without worry.

Our ramp patch is several acres and there is ZERO risk for over-harvesting which means we pick the entire ramp plant to enjoy.

When I work on a collaboration with a brand, I ALWAYS have extra ingredients leftover, like extra chicken sausages in this case and in order to have a pretty presentation of tortellini, I had to make 2 packages and use the best looking ones for my photography.

And it’s chilly today, so I was craving soup. Soup is my favorite food after all.

How to Make Sausage Tortellini Soup with Ramp Greens

I gave the sausage a quick slice and browned it. Tossed the sausage into chicken broth along with those less than perfect cooked tortellini along with several big handfuls of chopped ramp greens.

Oh, yeah and for some color, I added some chopped carrots.

I have to admit that the Italian Chicken Sausage is REALLY, honestly, good. Good enough that I would buy it again. It definitely added great flavor to the soup along with the PUNCH from the ramp greens. Together they definitely created an Asian-inspired flavor that I can’t get enough of.

The tortellini are the budget friendly cheese ones from Aldi. They always taste great but, as I mentioned before don’t consistently stay together as well as I wish they would, making them ideal for this ramp soup.

And lastly, after a long morning of doing “work” I wanted to share this recipe but simply didn’t have the creativity to put together a full photo shoot so these photos are super minimalist, cause they were really my lunch!

But I did try to show you the prettiest of the least pretty tortellini. Regardless falling apart tortellini still taste amazing so don’t worry if they fall apart on you too in this Sausage Tortellini Soup with Ramp Greens!

Easy Sausage Tortellini Soup with Ramp Greens

Ingredients

  • 8 cups Chicken Bone Broth <– my homemade recipe
  • 1 pack cheese tortellini cooked
  • 2 links Itallian Chicken Sausage sliced
  • 1 medium carrot peeled & chopped
  • 4+ cups Ramp Greens cleaned and chopped

Instructions

  • In a medium/large pot, lightly saute chicken sausage in a little fat until brown.
  • Add broth, carrots, ramp greens and tortellini.
  • Simmer to heat through. Season to taste with salt & pepper. Enjoy!
