Basil Lime Vinaigrette
With Basil season right around the corner, you are going to love my Basil Lime Vinaigrette for a healthy and creative way to enjoy summertime salads!
I have a thing for salads. I think they are such a delicious way to get more veggies into your day… but I know so many people may not agree. Too often we aren’t putting the effort into healthy, amazing homemade dressings, which IMHO, are what make salads great!
While, yes I add dressings to give my salad amazing flavor, the real reason they are important is because it is ESSENTIAL that we always have FATS with our veggies to make sure that we are getting their full nutrition potential. Fat soluble vitamins just go to waste when you skip the fatty dressings!
For a fun meal-sized salad, try my Basil Lime Vinaigrette tossed with butter lettuce, cucumbers, bacon, feta cheese, red onions and grilled pineapple! Oh my, it’s so stinking good.
Ingredients
- 1 large handful fresh basil leaves
- 2 medium scallions, sliced thinly
- 1 clove Garlic
- 1/4 cup Honey
- 1/2 cup avocado oil
- 1/2 teaspoon Sea Salt
- 2 medium limes, juiced
- 1 tablespoon Apple Cider Vinegar
Instructions
- Combine all ingredients in your blender. Process until smooth. Will keep in the refrigerator for up to a week.
