Cream Chipped Beef {Grain & Gluten-Free, Primal, Real Food}
One of my favorite childhood meals was cream chipped beef over toast and although I’m gluten free, making easy swaps; potato starch instead of the white flour and Cassava Flour Biscuits instead of gluten filled toast, I can still indulge!
On occasion we’d have it for breakfast, I mostly remember my mom making it as a snack in the evenings. Some of my favorite foods were the ones she made me for snacks: reuben sandwiches, fried zucchini and big bowls of cereal!
You may have a difficult time finding a quality dried beef (my local friends can rejoice since our private buying club has it available). Perhaps it’s a project I can work on, coming up with a way to make dried beef at home, for those of you who’s only option is the processed stuff in those little glass jars… If you have any sourcing suggestions or recipes; PLEASE leave them in the comments at the end of this post, thanks!
Ingredients
- 2 tablespoons Butter (or ghee)
- 1/2 pound dried beef, chipped
- 2 tablespoons organic potato starch or arrowroot starch
- 2 cups Whole Milk preferably raw
- Sea Salt
- Black Pepper
Instructions
- Lightly rinse dried beef under cool water, if desired and coarsely chop.
- In a sauce pot over medium heat, melt butter. Add dried beef and lightly saute 2-3 minutes.
- Sprinkle arrowroot starch over the dried beef and continue to saute for another 1 minute.
- Slowly add milk, stirring to combine. Allow to simmer for 3-5 minutes or until thick. Season with salt & pepper, to taste.

My mom also made chipped beef on toast as a kid and we all loved it. I have been looking for a healthy dried beef recently for backpacking and came across this post. Looks like its been a couple years since you posted it. Have you found anything?

*GASPS!* <—–my reaction when I saw this. My mom made this and it was always one of my favorite things she made. Except we called it "ham on toast". We use ham instead of beef. I think of things I want to make grain free that I like, and so glad I found this, thanks! Having fun looking at your recipes today.
