Last night when we were eating dinner, Ray said “You are the BEST at making comfort food, too bad you don’t have a comfort food blog!” And it kinda made me feel awkward. Like what am I really doing here, if I can’t share comfort food recipes with you?!
In reality, we (Ray and I) rarely eat hearty comforting carb-heavy foods because we don’t feel they are the healthiest for our bodies. However, when we think about the BIG picture, life is about balance and not strictness. So I’ve decided to openly share that we are real people, who eat real food.

Making deliciousness like my Creamed Chicken and Dumplings, while super carb heavy, can still be a part of your healthy diet when you stick to these few rules…
- Prioritize Nutrition. Make sure that every single ingredient is used with intention. Don’t sacrifice nutrition. In this recipe stick to homemade bone broth instead of packaged chicken bouillon, organic old fashioned einkorn flour instead of bleached enriched flour, loading it up with veggies and pastured raised chicken. Rely on providing your body with nutrient dense ingredients (like grandma used to use) instead of seeking chemical reactions with msg. And always stick to organic.
- Treat treats as treats. Does that make sense? Treats are treats. They aren’t for every day. Balance feasting with fasting. While there aren’t BAD foods, there are bad chemicals and bad macro ratios for some of us. I know that chicken and dumplings is a treat for my body because I don’t feel my best on a high carb diet. I make a big batch then immediately freeze the leftovers in individual portions so that I don’t over indulge. Last night we indulged in a heavy dinner, today I am fasting to let my body use all those energy carbs, if I continue to eat carbs, carbs, carbs my body will store them as fat. #balance
- Plan for Indulging. We decided a couple years ago to PLAN to enjoy our favorite homemade comfort foods in December every year. That’s when I make our childhood favorite foods from scratch like chicken and dumplings and other foods our grandmothers made. We don’t indulge every day but we will have a few special meals that are important to us. We get the warm and fuzzies then look forward to this season next year.
- Abandon the Guilt – Stop demonizing food. Stop punishing yourself. Embrace the season you are in. For us that’s enjoying memories of food, celebrating slow lazy winter dinners and allowing ourselves to feel HAPPY. This shift away from guilt to intention prevents that food-depression that pushes many people to abandon prioritizing health and binge. You aren’t cheating, you aren’t failing when you CHOOSE to live. When you give yourself the grace to find the balance you need to build health WHILE still enjoying living.

What is Einkorn Flour?
Einkorn flour is a wonderful way to improve your diet by bringing the purest wheat to your diet. Einkorn is nature’s original wheat and has remained the purest because it is untouched by modern hybridization and large-scale agriculture.
It’s imperative to use THIS ALL PURPOSE ORGANIC EINKORN FLOUR. I cannot make any guarantees that other brands or grinds will produce the same results. Many other types are coarse and taste stronger. The type I suggest is nearly identical to conventional white flour in recipes, like these dumplings made with einkorn.
If you do not tolerate gluten, I suggest using your favorite gluten free flour blend in this recipe 1:1 for great results. I use & recommend THIS GF FLOUR BLEND.

Creamed Chicken and Dumplings made with Einkorn Flour
For the Chicken & vegetable gravy
- 1 1/2 pounds boneless skinless chicken thighs or breasts
- 1/4 cup Ghee or butter
- 1/4 cup All Purpose Organic Einkorn Flour
- 1/2 teaspoon sea salt
- 1/4 teaspoon Black Pepper
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 1/2 teaspoon Paprika
- 1 cup Onion chopped
- 1 cup organic celery chopped
- 1 cup organic carrot peeled & chopped
- 1 cup dry white wine
- 6 cups chicken bone broth
- 4 ounces Cream Cheese
- 1 cup peas, fresh or frozen
- 1 cup green beans, fresh or frozen
For the dumplings
- Combine flour & seasonings and toss chicken to coat. Chicken can be cut into bite sized pieces or left in larger servings, as desired.
- In a dutch oven or other heavy bottomed pot, brown chicken in ghee over medium high heat. It does not have to be cooked through.
- Add onion, celery and carrots. Cook 1-2 minutes. Add wine, cook another 2-3 minutes to evaporate off alcohol.
- Add cream cheese and stir to melt then add broth.
- Add peas and green beans. Reduce heat to low.
- Make your dumplings; Combine flour, baking powder and seasonings.
- Using your fingers, add butter. Smooshing it into the flour, like a biscuit dough until a fine crumble.
- Mix in milk until a rough dough is formed.
- Bring gravy to a low simmer, drop dumplings by heaping 2 tablespoon scoops, yield will be roughly 12. They can be made any size desired. It's ok if they touch.
- Cover, allow to steam in the gravy for 10 minutes before serving.
