What are Key Limes?
If you are new to key lime pie and/or key limes on their own, I’m so excited to introduce you to them!
Key limes are the cutest little mini-limes. Just like their regular-lime cousins they are bright green when picked, but Key limes get increasingly yellow when ripe. Key limes also have more seeds, higher acidity, thinner skin and have so much more delicious aroma!
What is No-Bake Key Lime Pie in a Jar?
A Traditional Key Lime Pie is a custard style filling that’s the perfect marriage of tangy and tart with just enough sweet, combined with a crunch crust and topped with a dollop of whipped cream.
Typically Key Lime Pie is very high in carbs, made with naughty things like canned sweetened condensed milk and baked in a gluten-laden pie crust. While not difficult to make, also not healthy at all.
So, I did what I do best. I took a classic, cravable dessert and made it into an easier and healthier version!
Less of a custard and more of a Keto Key Lime Pie, my no-bake dessert is so easy to make yet packed with so much flavor!
How to Make Keto Key Lime Pie in a Jar

Why Blue Diamond Almond Flour?
That’s easy, Blue Diamond knows almonds, and theirs are second to none. Light and fluffy, it’s the perfect fine grind that sets apart any almond flour-based recipe. It’s important that you have confidence in the brand of almond flour that you choose. Using poorly made, too coarsely ground almond flour can ruin the best of intentions.
What ingredients are in a No-Bake Key Lime Pie?
To make a No-Bake Key Lime Pie with an almond flour crust, you don’t need any complicated ingredients. Just a few things:
- Monk Fruit or other Keto Friendly sweetener
- Blue Diamond® Almond Flour
- Key Limes or Key Lime Juice
- Cream Cheese
- Heavy Cream
The highlight of this Keto Key Lime Pie is the crunchy almond flour crumble we are going to use as the crust. It’s addictively delicious on its own, similar to a toasted almond granola.
Feel free to use the toasted almond pie crust recipe for other recipes! I know I will be!
While your almond flour crust is cooling, you can make the No-Bake Key Lime filling. I recommend using the juice and zest from fresh Key limes whenever possible, however bottled Key lime juice works really great too.
One of the biggest advantage to fresh Key limes is that you get the zest to put in the Key Lime Pies in a Jar as well as to use as a garnish.
It’s the little things, like fresh Key lime zest that makes recipes feel so much more gourmet!
In your mixer beat cream cheese and monk fruit until well combined and smooth. Then drizzle in key lime juice and zest. When it’s nice and fluffy, add the heavy cream, turn up the speed and WHIP IT!
You might notice that this filling is almost identical to my Keto Cool Whip Recipe, only with Key Lime Juice. It’s like a a No-Bake Key Lime Cheesecake! So much fluffy yum!
The easiest way to fill your jars is to use a pastry bag, and pipe in the filling. You don’t need a cake decorating tip, just cut the end off the bag and squish it in!
When it comes to the final touch, aka the whipped cream, you have a few options. You can use your hand or stand mixer to whip it, you can buy it in the spray can OR you can use a whipped cream dispenser.

- In a skillet over medium/high heat, melt butter. Add Blue Diamond® Almond Flour and monk fruit. Stirring often, toast until golden brown, 3-5 mintues. Remove from heat, set aside to cool.
For the No-Bake Key Lime Pie Filling
- Using a hand or stand mixer, combine cream cheese and monk fruit. Make sure it is smooth and creamy.
- Add key lime juice and lime zest, continue mixing.
- Increase mixer to high, drizzle in heavy cream and WHIP until light and fluffy.
For the Keto Whipped Cream
- Whip heavy cream, sweetener and vanilla until it's creamy and thick. Be careful not to over beat.
