Keto Low-Carb Greek Gyro Meatball Bites {Gluten-Free}

Ingredients

  • Chobani® Savor™ Whole Milk plain Greek yogurt topper
  • Fresh Mint

For the Gyro Meatballs

  • 1 pound ground lamb or beef
  • 1/4 cup coconut flour
  • 1 large Egg(s), Organic Pasture Raised
  • 1 tablespoon greek seasoning
  • 1 tablespoon red wine vinegar

For the Marinated Greek Salad

  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon greek seasoning
  • 10 medium cherry tomatoes cut in half
  • 10 medium kalamata olives cut in half
  • 1 small seedless cucumber sliced
  • 4 ounces feta cheese block cut into cubes
  • 1/2 medium red onion chopped

Instructions

  • Toss vegetables and feta cheese with olive oil, vinegar and greek seasoning. Allow to marinate while you are making the meatballs. 
  • Preheat oven to 350
  • Combine all meatball ingredients and mix well. Divide into 20 equal sized portions and roll into balls. 
  • Bake at 350 for 40 minutes or until cooked through. 
  • Assemble each bite; fresh mint, olive, feta, red onion, tomato, cucumber and meatball. 
  • Serve with a squeeze of Chobani® Savor™ Whole Milk plain Greek yogurt topper.
