Low-Carb Breading Mix {Primal & Keto friendly}
It feels really strange to be talking so much (recently) about low-carb… I feel like it’s a complete blast from the past, I started eating low carb back in 1999 when I was a senior in college and while I’ve never eaten a “high carb” diet, it’s only been recently that I’ve become more dedicated to eating low carb again.
When I talk about eating low carb, I’m not talking about high protein diets. I don’t feel that eating copious amounts of protein is healthy, I do however feel that low carb, HIGH FAT is extremely beneficial for most people (with moderate protein intake). And of course, we’re not talking about processed high fat foods like margarine, canola/soy/corn oil or trans fats – I’m only advocating real-food fats from traditional sources (like pasture raised animals, wild caught seafood, olives, avocados, coconuts, etc)
Getting back to my cooking-roots (after all when when I was first becoming creative in the kitchen it was with low-carb recipes) is a lot of easy fun for me. And I’m honestly excited to share these recipes with you because they are all so much better NOW that I’ve learned so much more about health and cooking over the years.
This Low Carb Breading Mix is made with just 3 ingredients; BBQ Pork Rinds, Asiago Cheese & Parmesan Cheese – all of which have been finely ground into a breading mix you can use just as you’ve used any other breading mix previously.
Of course I have to remind you to always choose the BEST quality foods, in particular make sure your pork rinds are made from natural, pasture raised pork. I purchase mine from US Wellness Meats, they are delicious and high quality. Oh and you get free shipping with all orders over $75!

Ingredients
- 8 ounces BBQ Pork Rinds
- 1 cup finely shredded asiago cheese
- 1 cup grated parmesan cheese
Instructions
- In your food processor, finely grind pork rinds
- Add cheese. Process until everything is finely ground and mixed together.
- Store in the refrigerator for up to 1 month.
I will definitely try this. I have been looking for something like this. I wonder how it would turn out to add a little almond flour to it? Not too much, just a bit to give it more of “breading” consistency. Hmmm… I will experiment. Thanks for sharing!

Unfortunately, I haven’t been able to find a BBQ Pork Rind that doesn’t have MSG! I’m going to try this recipe and make it with plain ones and a little seasoning! Thanks for the recipe!
Or just buy the ones I link to – they are from naturally/humanely raised hogs, no msg and not fried in rancid vegetable oils.
