If you’ve tried my Grilled Pineapple Salsa or if you just love pineapple as much as I do, you are going to love my Grilled Pineapple Shrimp Ceviche, too!

Grilled Pineapple Shrimp Ceviche

This easy recipe is basically ceviche shrimp with my amazing grilled pineapple salsa, it’s literally the best of both worlds for spring!

Before you panic about raw shrimp in your ceviche, I want to remind you that the shrimp is actually COOKED using the lime juice acid. HOWEVER if you are still creeped out, feel free to blanch your shrimp until they are opaque before soaking them in the lime juice.

After all those flavors come together it’s nearly impossible to stop eating!

Personally, I prefer my Grilled Pineapple Shrimp Ceviche served up with a few blue corn tortilla chips, while Ray just digs in with a spoon….

Ingredients

  • 1 recipe Grilled Pineapple Salsa

For the Shrimp

Instructions

  • Make your Grilled Pineapple Salsa, let it hang out in the fridge....
  • Combine all the shrimp ingredients in glass jar or bowl. Put in the fridge for 30 minutes. The shrimp will become opaque, indicating it's 'cooked' - mix a few times during the 30 minutes.
  • Add ceviche shrimp into your salsa, let it all hang in the fridge for another hour before serving.

  1. My husband and I were in Paris a bunch of years ago and had a shrimp seviche dish for a first course, with a finely poached egg in fillo dough on top of the shrimp. It was amazing!!!! It was like I died and went to food heaven. Lol!
