I couldn’t think of a better way to celebrate picking up our lamb from the butcher, than these amazing Gyro Lamb Meatballs {Paleo, Low-Carb & Whole 30}!

Funny story about me + lamb. Most of my young adult life, eating lamb was shrouded by anxiety.  I dated a really nice guy in high school, but his dad was NOT so nice. One day during dinner at their house, after taking my first bite of what I thought was a pork chop, I was passed a picture of the lamb that I had just swallowed.

Way back in the early 90’s my love of animals lead me to eating more veggies and less meat. I wasn’t a vegetarian, but I was in no way mentally prepared to come face to face with the animal I was eating… and the father knew that.

Seriously, who does that? Really.

But that was 25 years ago and much has changed in my life and hopefully at their dinner table, as well (right?!?!)

The only ill-feeling that I harbor from that dinner was that it held me back from enjoying, what is now one of my favorites, lamb.

I’m still an animal lover but I’m also a human-omnivore and it’s my responsibility to ensure that every animal that nourishes my body has lead a healthy & happy life.

The lamb that we picked up last week isn’t just any lamb. It’s a lamb that was lovingly cared for by the most amazing family at Footprints Farm.

While I’m pretty excited to have a freezer full of lamb-deliciousness (duh?!) but I’m more excited to call them our friends.

And their farm is like heaven on earth and it’s only a short drive from our home.

In the week since stocking our freezer with lamb, we’ve eaten (no exaggeration) 4 pounds of these Super Gyro Lamb Meatballs.

I’ve spoke before about leaving certain things the experts, like excellent spice blends. Bill & Hayley hit the spice-blend-ball out of the park with their Super Gyro Blend! It’s spot on for gyro flavor and it’s essential for these meatballs.

Simply mix your ground lamb, super gyro spices, egg and coconut flour together and roll’em into meatballs. You can make them any size you want, but THIS SCOOP is the perfect size for us.

And because I’m waaaaayyyyy too lazy to dig out a baking pan, I just bake them in my trusty cast iron skillet.

Before you know it they are cooked through and melt in your mouth tender, just begging to be eaten.

We’ve been enjoying these Super Gyro Lamb Meatballs with 5-Mintue Pressure Cooker Rice Pilaf with Pine Nuts and Parsley (recipe coming soon) and Greek Salads generously slathered with my Low-Carb Tzatziki Sauce.

And don’t forget LOTS of Kalamata Olives!

Ingredients

Instructions

  • Preheat oven to 350 degrees F
  • Combine all ingredients and mix well.
  • Roll into meatballs.
  • Bake covered at 350 for 20-30 minutes or until cooked through. The size of your meatballs will determine the cooking time.

  1. Thanks for this great recipe for the Lamb meatballs.
    For those of us who have no access to “Primal Palat” spices, do you have a breakdown of what spices are in that combination, and I’m sure that you would be able to tell what spices/herbs dominate that blend. I have about 75 spices – so I’ll bet I can pull it together if I know what’s inside the ‘special blend’.
    Also – I’m sure there are others like me…. so it would be great if you also included an alternative to any particular brand.
