One of the biggest misconceptions about eating with the seasons from local farmers is that the bountiful fresh deliciousness ends with summer. In fact, here in Pennsylvania, the best time of the year to support your local farmer is the fall, all the way through Thanksgiving.

Fall apples, winter squash, cool weather loving greens, broccoli, cauliflower, just to name a few of our favorites.

And with grocery storeslike Walmart, bringing local farm fresh foods to their shelves, eating local has never been easier!

I gotta admit, I was a little shocked to see such an assortment of fresh fruits and vegetables grown by local farmers in our neighborhood Walmart. There was a big display of local apples right up front when I walked in!

I also found local baby kale, green onions and Pennsylvania mushrooms.

And just like that, the wheels started spinning and that night’s dinner was going to be built around local foods!

You know I love connecting in person with my local farmers, but this is a way for more people to help support local farmers! Changes are happening. Our voices are being heard. Keep asking at your local stores for what you want them to carry; we are changing the landscape of our food system – kudos to us!

I remember 15+ years ago when I first started my healthy living journey and spent countless hours every week seeking out better foods, I never imagined that eventually Walmartwould be offering local options! I recently learned they do this in stores all over the country – they have a pretty big commitment to offering items grown locally in their communities.

And they have a fresh produce promise! If you’re not completely satisfied by Walmart’s produce, you can bring your receipt for a full refund. No questions asked and no need to bring back the produce. It’s all a part of Walmart’s commitment to make healthier food more affordable.

My Honey Mustard Pork Chop Kale Bowls are so easy. Start by making up a batch of homemade honey mustard dressing then let your oven do its magic with a little sheet pan cookery.

Coat your pork chops in honey mustard dressing, arrange them on part of a sheet pan lined with parchment paper (which makes clean up a breeze) then fill the rest of the pan with cauliflower rice and halved mushrooms.

While the oven is working its magic, prep your bowls with handfuls of kale and chopped apples. Top with your roasted cauliflower rice, mushrooms and pork chop cut into bite sized pieces. Top with green onions and dried cranberries.

Ingredients

Honey Mustard Dressing

Instructions

  • Combine all dressing ingredients, mix well.
  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Lightly coat each pork chop with honey mustard dressing (use roughly 1/3 of the dressing). Arrange on the parchment lined baking sheet.
  • Fill the rest of the sheet pan with cauliflower rice and mushrooms. Drizzle with olive oil and sprinkle with sea salt.
  • Bake for 20 minutes or until pork is cooked through, but still has a hint of pink.
  • Let veggies and pork rest while assembling the rest of your salad.
  • Fill bowls with baby kale, chopped apple, roasted veggies and cut the pork chops into bitesized pieces.
  • Garnish with cranberries and green onion. Drizzle with additional dressing just before serving, enjoy!

Notes

Can be enjoyed warm or chilled.
