Imitation Crab Recipes for Easy Weeknight Dinners

Looking for imitation crab recipes that fit into a busy week? Start with creamy shrimp and crab enchiladas, seafood salad, spicy kani salad or a bright, lime-filled seafood ceviche. These are recipes from my kitchen, with ideas for turning them into dinners, lunches and appetizers.

A little planning helps: the enchiladas take about 52 minutes, kani salad can be served right away, seafood salad needs at least an hour to chill, and the ceviche needs a two-hour refrigerated marinade. Choose the recipe that fits the time you have, including any cooking and cooling needed for the shrimp or scallops.

Which Imitation Crab Recipe Should You Make?

For a warm dinner: choose creamy seafood enchiladas. For a quick rice bowl: make spicy kani salad and serve it with cucumber and rice. For a make-ahead sandwich: choose creamy seafood salad. For a lime-and-avocado appetizer: try easy seafood ceviche with tortilla chips.

Creamy Shrimp and Crab Seafood Enchiladas

Two creamy seafood enchiladas with melted cheese, paprika and green onions, served with sliced avocado.

For a warm, cheesy dinner, my Chi-Chi’s-inspired seafood enchiladas combine shrimp and imitation crab in flour tortillas with a creamy lobster sauce made with white wine and sherry. Monterey Jack cheese melts over the top as they bake.

Make it a meal: serve with rice, sliced avocado or a simple green salad. The recipe makes eight enchiladas, or four servings of two enchiladas each.

Timing: 52 minutes total, including 20 minutes of prep and 32 minutes for the sauce and baking. Start with cooked shrimp. Get the seafood enchiladas recipe →

Spicy Kani Salad with Imitation Crab

Shredded kani salad with cucumber, scallions and sesame seeds

Thinly shredded imitation crab gets tossed with a creamy sweet and spicy mayo dressing. I like it with cucumber, green onions and sesame seeds. The recipe includes the dressing amounts, so you can make the whole dish from one recipe card.

Make it a meal: spoon the salad into a bowl with rice and vegetables. The recipe card makes eight side-dish servings, so plan larger portions if it is the main part of dinner. Rice and toppings are additions to the salad recipe.

Timing: about 5 minutes of prep. Serve immediately, or chill for 30 minutes if you prefer. Get the spicy kani salad recipe →

Creamy Seafood Salad with Shrimp and Imitation Crab

This is my re-creation of a deli-style seafood salad and one of my husband’s favorite cold salads. Shrimp and imitation crab are combined with celery, onion and a creamy dressing made with mayonnaise, crème fraîche, lemon and herbs.

Make it a meal: pile it onto bread for a seafood salad sandwich or serve it over greens with your favorite bread or crackers on the side. It also works for a packed lunch when you can keep it properly chilled.

Timing: about 5 minutes to mix, plus at least 1 hour in the refrigerator. Start with cooked, peeled and cooled shrimp. Get the creamy seafood salad recipe →

Easy Seafood Ceviche with Cooked Seafood

Seafood ceviche in a glass with tortilla chips and holiday greenery

For something bright and tangy, this ceviche combines cooked shrimp and scallops, imitation crab, lime, avocado, red onion, cilantro and diced tomatoes with green chilies. It was originally created for holiday entertaining, but the flavors work for a casual gathering too.

How to serve it: scoop it with tortilla chips as an appetizer, or build a light meal around it with rice and a salad. Fold in the avocado close to serving.

Timing: about 2 hours and 10 minutes, including the refrigerated marinade, with seafood already cooked and cooled. Lime juice adds flavor; it does not replace cooking. Get the easy seafood ceviche recipe →

Choosing Imitation Crab for These Recipes

Imitation crab is commonly made with surimi, a fish-based paste, plus other ingredients that vary by brand. Look for ready-to-eat products and follow the package directions. For example, Simply Surimi is sold fully cooked and ready to use.

For kani salad, choose a product that separates into thin shreds. For chunky seafood salad, flake-style pieces are convenient. Product names and textures vary, so use the recipe’s preparation instructions and the package you have rather than relying on “legs” or “sticks” alone.

Check ingredient and allergen labels. Imitation crab is not automatically gluten-free, and fish-based does not mean shellfish-free. Check the dressing, sauces, tortillas and toppings too if you are cooking around an allergy or dietary restriction. Nutrition varies by brand and by the complete dish; use your own ingredient labels when you need a specific carbohydrate or sodium count.

Make-Ahead and Storage Tips

Keep these cold seafood dishes refrigerated at 40°F or below, including during marinating. Start with properly handled ingredients and follow the shortest applicable storage guidance on the package or recipe. Mixing older cooked seafood into a new salad does not restart its storage time.

Keep crunchy toppings separate until serving. Add avocado close to serving for the ceviche, and pack cold salads in an insulated bag with ice packs when taking them away from home. See the FDA’s seafood handling guidance for preparation and chilling advice.

Can You Substitute Real Crab?

Some of these recipes allow it—the seafood salad post includes lump crab as an option. Real crab and imitation crab have different flavors and textures, so follow the individual recipe rather than assuming every substitution will give the same result.

What to Serve with Imitation Crab Recipes

Let the dish guide the sides: rice and avocado go with seafood enchiladas, rice and cucumber suit spicy kani salad, bread and greens turn creamy seafood salad into lunch, and tortilla chips are an easy partner for ceviche. These serving ideas are flexible additions, not changes to the original recipe ratios.
