5 Tips for making the BEST Keto Broccoli Cheese Soup

Making soup is always easy and forgiving, especially this one. but here’s a few Tips for making it easier:

  1. Use frozen broccoli. Less mess and it’s already pre-measured. Frozen broccoli is picked at the peak of freshness and you can keep it on hand without worry about fresh produce going bad if you don’t eat it up that same week!
  2. Grate your own cheese. Prepackaged cheeses almost always have an anti-caking agent added which, even though not called out on the package, can add carbs or ingredients you are intolerant to.
  3. Homemade Bone Broth or high quality purchase bone broth is best but chicken base will work in a pinch, just reconstitute it according to package instructions.
  4. Customize this soup to fit your taste. We prefer large chunks of broccoli and chicken, but you can finely chop yours if that’s better for your family. We also like to serve our soup with shredded cheese on top, instead of melting it all into the soup itself.
  5. Thickeners aren’t necessary. While I have an optional thickener step in the recipe, you might prefer your soup without it since the high fat dairy gives the soup a slightly thickened body on its own. Taste it first before thickening. (see below for more information)

Why add Chicken to Broccoli Cheese Soup?

What sets this soup apart from the other, countless, low carb broccoli cheese soup recipes is that we are adding chicken to ours.

The addition of chicken breast (or chicken thighs) gives this traditionally vegetarian-style soup an extra punch of protein. The extra protein helps to make this low carb broccoli soup a properly balanced keto meal in one bowl!

However, if you are needing to get even more protein in this meal, I recommend adding 1-2 scoops of collagen peptides powder to your bowl for an addition 10-20g protein!

How to Thicken a Keto Soup

After over 20 years of low-carb recipe development, I’ve found that Glucomannan is the best keto thickener.

To use glucomannan powder as a thickener, first whisk it with cold water and then combine it with the other ingredients in your recipe. One teaspoon of glucomannan powder is recommended for thickening one cup of liquid, HOWEVER I find that to be 100% WRONG and one teaspoon will thicken several cups of liquid to a creamy, gravy like consistency.

glucomannan powder is a tasteless and odorless substitute for cornstarch in recipes. You can also try it with smoothies and sauces.

For thickening this Keto Creamy Chicken Soup with Broccoli and Cheese, I recommend using only 1 teaspoon of glucomannan powder because it is already slightly thickened by the inclusion of shredded Colby and cream cheese.

This yields a very thick and luxurious, creamy broccoli cheese soup that reminds me of the texture of what Panera bread serves when you use the glucomannan powder.

I suggest taste-testing the soup without the glucomannan powder first, to see if the soup is thick enough on it’s own. For me personally, I do not need the thickener but from the feedback I have received from other similar keto and low carb soup recipes I’ve shared, most of you want the extra thickness.

Then adding 1 teaspoon at a time of the glucomannan slurry.

Can you Freeze this Keto Broccoli Cheese Soup?

Yes, yes and YES! You can freeze this Keto Broccoli Cheese Soup with Chicken Recipe. This recipe yields 4 generous savings. You can always place your leftover soup in a freezer safe container and it will keep in the freezer for about a month.

For longer storage or if you are tight on freezer space like us, We prefer to vacuum meal sized portions.

I know you can’t vacuum seal liquids but you can vacuum seal them if you freeze them first! (think of water vs ice cubes)

I divide ours into 2 – 2 serving portions, pour into vacuum sealable bags, freeze them standing up THEN vacuum seal them froze. I’ll then let them defrost slightly to press them into flat packs to take up the minimum freezer space AND they will defrost easily.

To reheat simply remove from the bag and heat on the stove OR heat the soup in the bag and pour it directly into your bowl!

  • In a medium sauce pan, over medium heat saute chicken in ghee. Season with sea salt, white pepper and dry mustard. Cook 3-5 mintues or until no longer pink.
  • Add garlic and onions. Saute 2-3 minutes.
  • Add cream cheese, stir to melt. Whisk in broth, bring to a simmer.
  • Add broccoli, cointune to simmer for a 3-5 mintues or until the broccoli is cooked to your liking.
  • Add cheese, stir to combine. All the cheese can be added or some can be reserved to serve on indivudual bowls, as desired.
  • OPTIONAL For a THICKER soup: Whisk glucomannan with a little cool water utnil smooth. Add into hot soup, simmer for a few mintues to thicken.
  • Enjoy your soup!
