Paleo Freezer Breakfast Burritos {Grain-Free, Gluten-Free & Primal}Let’s be honest. Having a healthy breakfast can be tough. For most people the morning is the busiest time of the day – whether your trying to get your kids off to school or hitting the snooze one to many times, there never seems to be enough time.

In less than an hour, you can quickly make a batch (or 2) of my Paleo Freezer Breakfast Burritos to reheat for quick and healthy meal. A grain free tortilla packed full of healthy protein, fats and veggies is the ideal way to start your Paleo Day.

To get started you’ll need to make a batch of my Perfect Paleo Tortillas, then fill them with delicious and nutritious egg, sausage, veggies and cheese if you tolerate dairy.

Give them a quick roll in foil or waxed paper. They’ll keep in the fridge for up to a week or the freezer for months. (Since the filling for these are technically a “western” omelet that’s what I call them in our freezer bag)

The Best Way to Reheat Frozen Breakfast Burritos 

Now that you have a plethora of Paleo Freezer Breakfast Burritos (this recipe yields 18 servings) you need to get them hot. By default when most people think of reheating foods, the first option that comes to mind is the microwave.

There’s much controversy as to the safety of microwaving food. And for us, the last thing we’d ever want to do it potentially ruin our healthy food by cooking/heating it in the microwave.

It’s not a risk worth taking.

We don’t put filtered/purified water into toxic plastic bottles to drink from. And we don’t use a microwave.

We’ve been a microwave-free home for over 10 years. It was the first BIG step that we took toward a longterm comitment to a healthy, real-food lifestyle.

When you talk your husband into removing your built-in over the range microwave, things just got real. Perhaps we’re both equally crazy, I’m just leading the parade.

Looking back, I can’t remember one single time we had to ‘do without’ because we didn’t have a microwave. Zero Regrets.

I know for many people it’s hard to image a life without the instant heating capabilities of a microwave and while I mention the possibility of destroying healthy foods – the truth is that we feel that our food deserves more respect than a microwave.

Here’s my rant. Famers pour their blood, sweat and tears into growing the most amazing foods that nourish our bodies, these foods deserve to be cooked with love. Not nuked for 30 seconds.

When I mention life sans-microwave, the biggest push back I hear is … ‘but I reheat lunch at work in the microwave every day, it’s my only option’ BUT there is another option for heating food away from home – and it’s even more convenient than a microwave!

Oh, one last thing – a little bit of a confession – when I was making these I ate a couple.

Ok I ate more than a couple – I ate 6 of them in 24 hours.

In fact it’s all I’ve eaten in the past 24 hours. I had 2 for brunch made fresh, then 2 reheated in the toaster oven for dinner and this morning, 2 more frozen Paleo Freezer Breakfast Burritos reheated in my HotLogic Portable Oven for breakfast….

Paleo Freezer Breakfast Burritos {Grain-Free, Gluten-Free & Primal}

Ingredients

  • 1 batch Perfect Paleo Tortillas <-- get my recipe
  • 1 pound breakfast sausage bulk or removed from casing & chopped
  • 1 large Red onion
  • 1 medium finely chopped green pepper
  • 1 medium finely chopped Red Pepper
  • 8 large Egg(s)
  • - Sea Salt
  • 2 tablespoons Coconut Oil divided (or butter/ghee)
  • 1/2 pound raw cheddar cheese, shredded optional if dairy is tolerated.

Instructions

  • Make 1 batch of my Perfect Paleo Tortillas according to the recipe. Set aside.
  • In a large skillet with sides, cook sausage, onions & peppers until sausage is no longer pink. Set aside.
  • In a separate large skillet, cook beaten eggs in coconut oil. Season liberally with sea salt and pepper. Set aside.
  • In assembly line fashion, equally divide the sausage mixture, eggs and cheese between each tortilla. Roll up in wrap in foil or wax paper. Store in a plastic bag in the freezer for up to 3 months.

Notes

From REFRIGERATED: Reheat in your HotLogic Portable Oven in 60-90 minutes or in the toaster oven for 15 minutes at 350F.
From FROZEN: Reheat in your HotLogic Portable Oven in 2-3 hours or in the toaster oven for 30 minutes at 350F.
I cannot provide microwave instructions since we do not have one, nor do we advocate using one.
