I’m really flexing my “work from anywhere” muscles this week, while attending The Foodie Bootcamp in beautiful Salt Lake City, Utah.
While it’s technically work, it’s more self care than anything.
My job, here, as a blogger and photographer isn’t just about a paycheck. What I do every day is a labor of love, an expression of my creativity and passion for health that makes my soul happy. I consider what I do as a full-time hobby that also generates income, rather than work.
When I arrived in SLC, I had a completely free afternoon all to myself and I elected to spend it uninterrupted watching Netflix in my comfy, quiet hotel bed.
I literally did nothing.
and it was AMAZING.
I did feel some guilt that I SHOULD be out exploring the city or connecting with other ladies at the bootcamp.. BUT I reminded myself that I was more important that any preconceived notions about what anyone else expectations of my time away should be.
When I’m at home, doing my normal every-day routine, it’s practically impossible for me to truly take a complete break. There’s always work to do, whether it’s blog-business-work OR regular household & homestead stuff, you’ll rarely find me mindlessly taking an afternoon off.
It’s amazing what difference 4 hours of ME TIME can do for the body, mind and sprit.
This morning, during my first food-photography session of the bootcamp, I was so overwhelmed at the selection of amazing foods available for us to use for our creations. I admit that I got a little paralyzed at the options.
People were creating dessert inspired, fruit topped toasts and smoothie bowls… I envied their work. But those foods didn’t seem right for me, and you, as my audience. I’m not a sweet lover and I just wanted to do something radically different.
I started with a savory base of seasoned ricotta cheese, which is low in carbs and keto friendly… Then topped it with delicious olives, nuts and hemp seeds. Drizzled with healthy avocado oil and garnished with green onions and herbs.
The taste is even more amazing than the photos. I promise.

- In a small bowl combine ricotta cheese with a pinch of sea salt, black pepper and a squeeze of fresh lemon juice. Smear on the bottom of your serving plate/bowl.
- Top ricotta with olives, hemp hearts, and nuts. Drizzle with avocado oil and sprinkle with sliced green onions.
- Garnish with fresh herbs, if desired. Enjoy!
