Grilled Shrimp and Scallops with Cajun Mustard Sauce {Keto & Low-Carb}
Have you ever looked at a photo on Pinterest, Social Media or the Internet and thought to yourself, Yeah Right?!? Nobody REALLY lives like that, their meals aren’t that pretty or who takes the time to set a pretty table with cloth napkins?
What I want to share with you today is the single most important lesson that I’ve learned as a creative professional over the past 7 years… After spending years chasing the dream of creating beautiful images to try and entice you to click though to my site to get my recipes and read my words, I learned that my own personal everyday is WORHTY of having magic in it and so is YOURS!
YOU are responsible for creating your own magic.
For me that means that means that I AUTHENTICALLY live a life filled with beauty, even when there’s no camera lens to capture it.
Even when we are camping.
Camping means different things to different people, for us while we sincerely appreciate getting away from the hustle-and-bustle of every day life and roughing it off-grid (with very very limited internet connection) we still prioritize meal time.
And with those meals, I am constantly challenging myself to create meals that seem gourmet (and generally too fussy for camping) that are nearly as easy as opening a can of soup…
I mean, if you want to eat cereal out of a paper cup, go ahead and you-do-you.. but I want the memories of my life to include flowers on the table, fresh herbs as a garnish and delicious, memorable meals, worthy of a toast!
So, I can assure you that when you see these pretty photos of our Campfire Grilled Shrimp and Scallops with Magic Creamy Cajun Mustard Sauce, it’s seriously our real life.
It’s so much MAGICAL deliciousness that’s shockingly easy to make and TAKE camping with you. All the flavors of a gourmet meal but none of the fuss, thanks to Colman’s Mustard!
Here’s where my signature honesty comes into play… This isn’t a meal that I probably wouldn’t have made without being pushed outside of my comfort zone.
The honest part is that I actually don’t eat mustard..
And while I buy mustard by the case for Ray and I’ll use mustard in my Flavor Bomb Deviled Eggs or Confetti Egg Salad… Mustard is the one food that I really do avoid otherwise.
First things first, Ray had to taste-test Colemans’ Mustard. He gave it a big THUMBS UP. He said that if you’re into yellow mustards with a spicy-kick, Coleman’s Mustard is amazing!
One of Ray’s favorite snack-meals are boiled hot dogs with chopped onions and yellow mustard… sitting on the couch eating off a TV tray.
It’s a messy business making mustard, but that’s okay. Colman’s loves a good hot mess, because Colman’s Mustard is hot. Not throat hot, but nose hot. Like wasabi and cayenne had a baby. Colman’s isn’t just a condiment. Their dry and prepared mustards can be used IN recipes to really bring out the heat. Add a PUNCH to your favorite casserole, rib rub, or slather the prepared mustard on your favorite sandwich.
Challenge accepted.
I got really excited to play around with Colman’s Mustard and create an amazing recipe to enjoy on our next camping trip!
I started thinking about ways that I could embrace that PUNCH of heat that Colman’s Mustard is known for and elevate a food that we already love. So, not only is this the first time I’ve tried Colman’s Mustard, It’s also the first time that I’ve really ever thought about ways to incorporate mustard into a delicious meal!
While I’m not going to say I’m a mustard lover now, I will say that I have a new appreciation for how much depth it can give your food, especially Colman’s Dry Mustard Powder.
The biggest secret that I have to taking that MAGIC with you camping is to do as much meal prep work at home, giving you more time for R&R and less time dealing with fussy recipes and dirty dishes.
Keto Grilled Shrimp and Scallops with Cajun Mustard Sauce
To get started, we’re going to make a Dry Mustard Cajun Spice Blend…
Then we’re going to drizzle shrimp & scallop skewers with olive oil, season generously and then wrap them up!
Lastly, before we leave for camp, we’ll make almost instant Magic Creamy Cajun Mustard Sauce by combining heavy cream, cream cheese, grated parmesan cheese and our Dry Mustard Cajun Spice Blend in a jar with a lid.
Obviously this is a fun twist on a classic alfredo sauce, only made BETTER!
Seal up your jar and give it a good shake-shake-shake!
When you get to camp (with your seasoned shrimp, scallops and pre-mixed sauce kept cold in your cooler) all you need is a fire, grill and skillet to get the magic started! Grill your shrimp and scallops first, then let them rest while you get your sauce heated & whisked smooth. Toss some fresh broccoli on the grill too.
While your sauce is simmering, pour a glass of wine and relax! I like a crisp, dry white wine with Campfire Grilled Shrimp and Scallops with Magic Creamy Cajun Mustard Sauce.
Spoon some sauce on your plate, top with shrimp, scallops and broccoli.. take your time and enjoy the quiet sounds of camp and good conversation with your friends & family.
In addition to some fresh picked flowers, enamelware dishes and cute linens, I also never go camping without FRESH HERBS! Adding a few sprigs of fresh thyme and extra parmesan cheese really makes this a photo-worthy meal, don’t you think??
Oh, yeah and I’m now keeping some Colman’s Mustard with us too, incase I get a recipe inspiration!
From cooler to table in less than 20 minutes, I don’t think gourmet tasting camp food can get any better!
Or more beautiful, right?!?
While we all have foods that we don’t love, it doesn’t mean that you can’t enjoy them as a part of a dish even if you don’t eat them alone. I’m grateful that I had a reason to push myself outside of my comfort zone and now have a new ingredient to play with, of all things Mustard!
Packing your Punch {of flavor} and bringing your Colman’s to your summer adventures is even easier with THIS COUPON from iBotta!

My fiancé and I made this when we went and stayed in Sleeping Bear Dunes and it was delicious! A little bit more romantic than brats. 🙂
