And from what I’m hearing from other foodie bloggers, Ricotta overall is the new must-have ingredient in your fridge. Wether for a traditional Italian dish, smeared on toast or in my favorite way (duh) as a keto, low-carb friendly way to enjoy all the feels of a yogurt parfait or smoothie bowl in a savory way!

I’m totally in my groove here during day 2 at The Footie Bootcamp, in Salt Lake City (which BTW is beyond gorgeous) All the light in our photography area and the fresh ingredients are such an inspiration, how can I not share these recipes with you ASAP.
Whipping together whole milk ricotta with garlic, lemon zest and sea salt to make your base, then top with all.the.basil (as if it was lettuce) then add fresh tomatoes and drizzle it all with lots of olive oil and balsamic vinegar!

- Add fresh basil leaves and top with halved or quartered cherry tomatoes.
- Lightly season tomatoes with s&p, then drizzle it all with balsamic vinegar and olive oil.
