One of the biggest mistakes folks following a keto diet make is thinking that it’s simply a low-carb diet, neglecting to prioritize that the focus of eating keto is HIGH FAT! If you aren’t specifically and purposefully eating ample (75+%) fat, you’re not getting the full benefits of a keto diet and potentially not reaching a ketogenic state.
So, before anyone says WOW THERE’S A LOT OF FAT in this soup, I want to remind you that it’s a keto recipe and it should be full of fat!
How to Thicken Keto & Low-Carb Soups without Starch
Too often keto recipes are simply reduced carb versions of traditional recipes that still use a carbohydrate thickener (only less), when it’s totally not necessary when you can use high fat dairy! Cream cheese, heavy cream and melted cheese will give you all the thickness you want with nearly ZERO carbs. (I also use this Keto-trick in my break-the-internet popular Low-Carb Pressure Cooker Buffalo Chicken Soup!)
And while we’re talking about dairy, make sure that you ALWAYS choose the highest quality available; full fat, organic, grass/pasture raised and raw, whenever possible!

Keto Jalapeño Popper Soup Recipe
Ingredients
- 6 slices bacon chopped
- 4 large jalapeño peppers cleaned and chopped
- 1/4 cup onion chopped
- 1 clove Garlic
- 8 ounces Cream Cheese
- 1 cup Heavy Cream
- 8 ounces cheddar cheese shredded
- 1+ cup chicken bone broth
- 2 cups cooked chicken shredded/chopped
- sea salt to taste
- crushed red pepper to taste for extra spice!
Instructions
- In a medium sauce pot or dutch oven, cook chopped bacon until crispy. Scoop out cooked bacon and set aside, leaving the bacon fat in the pot.
- Saute jalapeno peppers, onion and garlic until soft, roughly 2 minutes over medium heat.
- Add cream cheese and heavy cream, reduce heat to low and stir to melt cream cheese. Once melted, slowly add in shredded cheddar cheese continuing to stir.
- Add bone broth to thin your soup to your desired consistency, I suggest starting with 1 cup.
- Fold in cooked chicken, season to taste with sea salt and crushed red pepper for extra spice!
- Enjoy when heated through!
