When I  was making my first attempt at Creamy Bacon Pea Salad, I thought — Yeah Right, this might be something I’d LOVE but Ray (my hubby) certainly isn’t going to like it. Ray doesn’t love peas, he tolerates them on occasion, preferably only fresh from our garden….

HOWEVER after taking just a few bites of my delicious creamy pea-filled salad,  he proclaimed “I wish my mom made peas like this when I was little, this is awesome!”

I’ve made it 3 times since I first came up with the recipe – and will probably make up another batch this weekend!

And now Ray loves peas…. well peas in my Creamy Bacon Pea Salad – but I’ll take it.

How to make English Pea Salad

The hardest part to making English Pea Salad is making hard boiled eggs, and I’ve got you covered with my The Secret to Perfect Hard Boiled Eggs {stovetop method}. Give those eggs a peel and set aside.

Then fry up some chopped bacon, let it drain on paper towels.

In a large bowl, combine all the ingredients and let those textures come together with a cup mayonnaise. Give it all a stir until well coated.

    So. This was really, REALLY good. And from ingredients most people probably have on hand. Just as good, or better, than potato or macaroni salad.

    That said – I do have a bone to pick, lol, it is NOT low carb by any stretch of the imagination. I eat a ketogenic diet. I saw the low carb label and didn’t even think twice, I made this Sunday. Ate it all by Monday night and made more Tuesday. I should’ve recognized the telltale “too carby eating craving cycle” but I didn’t and kept on eating until it dawned on me I was suddenly craving ice cream and chips and cereal and all sorts of starchy stuff. So I looked it up – how I never realized peas are right up there with potatoes in terms of starchy carbs I don’t know. But maybe you didn’t either 😛 So I’m posting to share. It’s an excellent tasting recipe, I LOVE it. But…it’s definitely not low carb.

    1. it’s not Keto-Friendly but it is LOW CARB, I’m sorry that it was confusing to you. Generally speaking a low carb diet is <100g carbs a day. I'm glad you enjoyed it but it's imperative that you calculate your carbs for everything during Keto, not just eat low-carb.

      1. This recipe yields 4 servings, with 20g carbs and 6g fiber for 14g Net Carbs per serving.
