 I’m going to admit, I was skeptical about using Pork Rinds for nachos. I actually knew people did it for YEARS but never did it myself. Honestly I’ve been dipping pork rinds INTO nacho cheese dip (literally since 1999) but I never made them for Pork Rind Nachos!

Pork Rinds vs Chips for Nachos

You may be wondering why would you choose to ditch the tortilla chips and use pork rinds instead, right?! To answer you simply, it’s all about the carbs baby! Pork rinds a have ZERO CARBS made of just pork fat that’s layered just under the skin of a pig that’s been cooked in hot oil in which causes it to get crispy and puffy, making them the perfect snack for a low-carb diets!

Unlike what you might think about a crunchy snack you find at gas stations, convenience stores & grocery stores store shelves, pork rind are NOT ultra-processed foods. The good news is that they can be a healthy snack for those following a paleo diet or low-carbohydrate diet to prevent health problems and weight gain.

Did you realize that you can easily reduce the carbs in your plate of nachos by 75% by swapping Pork Rinds instead of chips! Making it a no brainer that when it comes to Pork Rinds vs. Chips for low carb diets, pork rinds are the clear winner!

No plate of nachos is complete without a drizzle of melted nacho cheese sauce, so promise you won’t skip this step!

  • Butter (or ghee)
  • jalapeno pepper finely diced
  • cream cheese
  • cheddar cheese
  • Heavy Cream
  • Mexican Hot Sauce

  • Ground Beef

Since then we’ve enjoy our low carb nachos several times, made in a variety of ways. But with my homemade jalapeño spiked Keto Cheese Sauce, taco meat and lots of fresh healthy toppings is what we’ve found best.

What are the best Pork Rinds for Nachos

Let’s be honest, pork rinds are all extremely similar and I’m not too picky about which ones that I purchase but I do have 2 favorites:

  • Aldi Pork Rinds; Plain & Spicy – I purchase a bag of each once a week to keep our pantry stocked to make both these Pork Rind Nachos AND to use for my delicous Low-Carb Breading Mix {Primal & Keto friendly}
  • Microwave Pork Rinds have been a favorite snack of mine since I was a kid in the 1980’s – I remember my grandmother making them for us to enjoy. We keep them on hand for a fun option instead of microwave popcorn.

Pork Rind Nacho Substitutions

Here are a few substitutions and swaps that you can consider when making your own Pork rind nachos!

  • Ditching the cooked ground beef, instead using ground chicken or ground turkey. .
  • For a tex-mex twist, like my Smoked BBQ Pork Nachos use my keto barbecue sauce along with leftover pulled pork carnitas or shredded beef. Just imagine how delicious a bag of pork rinds poured onto a platter would be topped with bbq sauce and a sprinkle of shredded pork would be for an easy low carb snack!
  • Go heavy on the lettuce for more of a salad style nacho platter
  • Omit the hot sauce if you prefer more of a sweet dish instead of spicy
  • You can use plain pork rinds, regular pork rinds, pork cracklings or fried pork skins; you’ll find different variations of pork rinds when shopping. NO matter what brand of pork rinds or flavor of deep-fried pigskin you choose, these bite-size pieces of crispy snacks will be fabulous! Different names but all the same. The only suggestion I have is to take a closer look and try to avoid artificial flavors that include monosodium glutamate, it’s notorious for causing headaches.

Instructions

Keto Nacho Cheese Sauce

  • In a skillet over medium heat, lightly saute finely diced jalapeno peppers in ghee until soft.
  • Add cream cheese & shredded cheese, stir while melting.
  • Thin to your desired consistency with heavy cream and season with Sabor!

For the Pork Rind Nachos

  • Cook ground beef with taco seasoning until cooked through, no longer pink.
  • Layer pork rinds, cheese sauce, beef, tomatoes, jalapenos
  • Garnish with avocado, sour cream, cilantro and drizzle with Sabor! Enjoy.
