Fridge Clean Out Salad with Honey Poppyseed Dressing
Spring has SPRUNG and so have our local farmers’ markets! It’s that time of the year when we excitedly rush out and load our refrigerators full of the bountiful harvest. No doubt with BIG plans on how we’ll utilize all this beautiful, nutritious, fresh produce…but then life happens.
The week hurries on and before you know it, you never got around to using most of what you bought at the farmers’ market and it’s starting to go bad.
I’m right there with ya. It’s happened to me more times that I can count.
But not anymore.
What if I told you that there’s a secret to keeping produce fresher longer just by the changing the way you store your fruits and veggies?
You’d probably think I’m totally nuts, right?
Or that there’s some super complicated ritual, with washing, soaking and/or wrapping…

Greens, berries, cucumber and cauliflower made dinner one night…
This dressing is the hero. It helps to balance tangy greens like kale, spinach and chard (that you might be less eager to put in a salad) with sweet fruits. Like one of those fancy restaurant salads that you always wish you could make at home!
Only made with leftovers, instead.
When in doubt, toss in some leftover roast chicken with fruits, veggies and a few nuts or seeds that you have on hand with Homemade Honey Poppy Seed Dressing!
Literally any and all fruits and veggies work great.
Now there’s no excuse to let those delicious, fresh and nutritious fruits and veggies go to waste. They’ll keep for longer in your fridge AND you’ve got an amazing dressing recipe that will soon be your family favorite.

Ingredients
- 1 cup avocado oil or olive oil*
- 3/4 cup Honey
- 1/3 cup Apple Cider Vinegar
- 1/4 cup Water, filtered
- 1/8 cup Onion
- 3 teaspoons Dry Mustard Powder
- 1 teaspoon Poppy Seeds
- 1/2 teaspoon Sea Salt
Instructions
- Blend (in your blender) until combined. Store extra dressing in the fridge for up to a week.
