{2 Ingredient} Slow Cooker Peperoncini Beef Roast
Some of the our favorite recipes are painfully simple, my {2 Ingredient} Slow Cooker Peperoncini Beef Roast is the perfect example. I remember having this delicious beef roast at a friends house years ago and she was kind enough to share her secret recipe with me (thanks Paula!!) — which in turn I’m sharing with all of you!
With just 2 ingredients you can make the prefect beef roast your whole family will enjoy; a jar of  peperoncini peppers and a beef chuck roast (preferably pasture raised).  I recommend THIS brand of peperoncini peppers because they don’t have any yucky ingredients or food colors added.
Toss everything together in your crock pot or slow cooker and in just 6-8 hours on low, you’ll have melt in your mouth tender beef roast with the tangy favoring of peperoncini peppers! AND don’t worry if you didn’t thaw out your roast, feel free to start with a completely frozen roast just add  2 hours to the cooking time!
Ingredients
- 2 pound Beef Chuck Roast with or without bone
- 1 jar peperoncini peppers
Instructions
- Combine roast and jar of peppers (including liquid) into your crock pot or slow cooker and cook on low for 6-8 hours.
Simple but oh so good! This is a favorite of mine. I put a link to this recipe on my blog’s Weekly Meal Plan. I hope a lot of my readers give it a try!
What would you reccommend as a good side? BEsides Salad?
Cauliflower Mash or Rice
Great idea, a slow cooking brine. Yum. This will be on the menu soon.
