Zucchini Hamburger

One of my most favorite flavors of the summer is garden fresh ZUCCHINI, especially when paired with tomatoes and basil – OH SO YUMMY! This recipe is a undeniably healthy, yet is packed full of family friendly flavor and is perfect for a week night meal since you can get it on the table in less than 30 minutes!

The secret to making a dish so full of flavor so quickly, is using MASSEL’s Beef Bouillon Granules!! They are my go to shortcut secret, they incorporate all the flavors of all-day-long-simmering in an instant 🙂 Yes, of course I love long-slow cooked meals and you all know what a HUGE advocate I am for having homemade bone broth as a part of your regular diet for health reasons – but I know so many of you are busy and need healthy meal options that everyone will love and come to gather in a snap! Ok – so make sure you grab some Massel Bouillon to have on hand for quick meals like this one, buy it HERE close up For those of you (like me) who are don’t eat grains and/or are Paleo – Feel free to swap in my Cauliflower Rice instead of regular rice… it’s just as yummy!

Ingredients

Instructions

  • In a large skillet, over medium heat, brown ground beef
  • Add fat, onions & celery, cook lightly
  • Add tomatoes with juice and Massel Beef Bouillon Granules, chopping coarsely large chunks with your spoon, season with garlic salt and pepper, simmer over low for about 15 minutes
  • Just before serving, add zucchini and cook very lightly
  • Serve over a bed of rice or cauliflower rice
  • Enjoy!

Notes

You can make this into a soup by adding 4 cups of tomato juice and combining the rice into the dish.
