One of my favorite summertime foods are undoubtedly homegrown cucumbers. Growing up, I have such fond memories of my Grandma Elsie picking fresh cucumbers and making me her famous cucumbers & sour cream for my breakfast.
Today, I still enjoy her cucumbers and sour cream often but I’ve renamed it “Low-Carb Creamy Cucumber Salad” and made you a quick video showing just how easy it is to make!
Well, I’m not sure that it’s even worthy of being called a recipe 😛
But nonetheless, it’s a delicious salad or side dish in the warm summer months. Who’d have thought that somethings so simple could be so delicious??
- Toss sliced cucumbers with sour cream. Season to taste with salt, pepper and fresh chopped dill.
