Savory Spinach and Feta Waffles {Grain-Free, Gluten-Free & Primal}
There’s only one way to describe these Savory Spinach and Feta Waffles – DELICIOUS! Even I have to admit that I was shocked that they turned out so amazing awesome on the very first try, rarely does that happen with this type of recipe – where you blindly mix together ingredients and you can’t taste and adjust.
It was love at first bite.
And here I sit, struggling to not eat them ALL – After hearing about these delicious Spinach and Feta Waffles then seeing the photos on Instagram, Ray comes home to find that I ate them all would be totally awful of me.
But I want to eat them ALL. Right Now.
Garlicky sauteed spinach and creamy feta cheese all wrapped up in a crispy, savory waffle….. Hot or cold…. plain or dipped in tomato sauce… all pure DELICIOUSNESS.
The truest test of ones’ marriage is saving your spouse some of your Savory Spinach and Feta Waffles… Luckily for Ray, I love him to the moon and back!
Cassava Flour Spinach and Feta Waffles {Grain-Free, Gluten-Free & Primal}

- 1.5 cups cassava flour
- 2 teaspoons Homemade Seasoned Salt <-- get my homemade recipe
- 1 large eggs
- 2 cups Water, filtered
- 1 pinch Italian seasoning
- 1 teaspoon cream of tarter
- 1/2 teaspoon baking soda
- 5 ounces baby spinach
- 4 tablespoons Ghee divided
- 1 pinch Crushed Red Pepper Flakes
- 2 cloves Garlic minced or pressed
- 3/4 cup Feta Cheese crumbled
Instructions
- In a skillet over medium heat, sautee garlic in 2T of ghee add spinach and reduce heat to low. Season with sea salt and crushed red pepper, cook just until soft and wilted. Remove from pan and set aside, will yield approx 1 cup cooked spinach.
- Melt remaining 2T of ghee in the same (dirty) skillet the spinach was cooked in - to be added to the mixture in the next step.
- Combine all other ingredients (except feta cheese) and mix until smooth.
- Add feta and spinach to batter and gently fold in, preferable by hand. You can make the batter in your food processor or blender then pulse to combine spinach & feta, but you do not want to finely chop the spinach, it should stay in large pieces.
- Preheat waffle iron and cook waffles according to factory instructions. You want your waffles to be lightly brown and crispy - the crispier the better!
- Transfer cooked waffles to a cooling rack and allow to cool slightly before serving.
