We started our local Azure Standard drop about 6 months ago and it was love at first delivery. So much so that I immediately took advantage of their Azure Advantage Membership.

This month, Azure Advantage Members received the March Discovery Box which included a sample of Azure Standard’s Organic Whole Wheat Muffin Mix (amongst other wonderful things).

These unique muffin mixes are made with Unifine Processed Organic Soft White Whole Wheat Pastry flour. In the Unifine Process the grain enters a high speed rotor and is instantly shattered into fine flour – even the bran and germ are burst! Air goes through the rotor with the grain and blows the flour out, thus keeping it cool throughout the process, retaining many nutrients. With the Unifine Process the natural oils in the grain are kept intact and do not get hot like in regular grain milling and stoneground milling.

A hint of cinnamon and nutmeg make this organic whole wheat muffin mix exceptionally tasty. The muffins bake up moist and hold together well. Variations to suit individual tastes are nearly limitless.

Shortly after I arrived back home and put away my monthly groceries, I immediately HAD to create some muffin deliciousness. Here’s the thing.. we aren’t big sweet-eaters and if I didn’t make something right away, I feared that the muffin mix would get pushed to the back of the pantry and may never get used.

And I knew that I had just enough time to make a batch of muffins before our friends Sarah & Steve stopped over to pick up their Azure order and I could share some freshly baked muffins with them!

The recipe on the Azure Standard website for their muffin mix was just for a basic muffin (not very exciting.) But by adding a pop of lemon (also from our March Discovery Box), frozen blueberries and a crunchy sugar topping – now that’s an exciting muffin!

Ingredients

Instructions

  • Preheat oven to 400 degrees. Line a cupcake pan with paper liners or grease.
  • Combine liquid ingredients (water, butter, eggs, & lemon extract) and mix well.
  • Add wet ingredients to dry, mix well.
  • Gently fold in frozen blueberries.
  • Divide Blueberry Muffin batter between 24 cupcakes/muffins. Top each with a generous sprinkle of sugar.
  • Bake for 17 minutes at 400 degrees. Allow to cool slightly then enjoy!
