Canadian Bacon and Spinach Fried Rice
My favorite meals are the ones you didn’t intend to be delicious, my Canadian Bacon and Spinach Fried Rice is a perfect example.
Not saying that the ingredients didn’t sound good together, but I really didn’t expect this to become a dish I love so much. Mostly because it’s so stupid-easy but also because it’s so yummy!
With just a few simple ingredients you can take some leftover cooked rice, Canadian bacon, spinach and butter and come up with a fancy looking meal in less than 5 minutes. AND it’s full of healthy, real food!

Ingredients
- 6 slices Canadian Bacon
- 2 tablespoons Butter (or ghee) divided
- 4 cups fresh spinach 5 ounce container pre-washed
- 2 cups cooked rice
- Sea Salt to taste
Instructions
- Thinly slice Canadian Bacon (julienne) and fry in 1 tablespoon of butter over medium heat until lightly brown and with crispy edges.
- Reduce heat to low, add spinach and toss to wilt then add rice.
- Stir to combine and cook only long enough to heat rice. Add additional butter then remove from heat season to taste.
- Serve with grated raw cheddar or parmesan cheese, if desired. Enjoy!
