Paleo Fried Oyster Chowder

oyster chowder-01 It’s not that I wouldn’t have tried oyster on my own, but I am very grateful that my hubby introduced me to them right after we started dating. Since then I’ve never met a oyster I didn’t like 🙂 This quick and easy oyster stew recipe is sure to please any oyster lover, and it’s Paleo Friendly (using coconut cream instead of the half & half)! And although the stew itself is super yummy, I strongly encourage you make a few fried oysters to garnish!! (click HERE for my Grain Free Breading Recipe, just drain your oysters and generously coat them withe my breading mix and fry until golden brown in the healthy fat of your choice) The contrast of the crispy fried oyster with the creaminess of the stew is a true party in your mouth 🙂

Paleo Oyster Chowder

Ingredients

Instructions

  • In a sauce pan over medium heat, sauté onions, celery & carrots in butter for about 5 minutes, or until the carrots are almost cooked
  • Season onions, celery & carrots with celery salt, white pepper & paprika, stir to combine
  • Add oysters with liquid and cook until the edges of the oysters begin to curl
  • Whisk together potato starch and half & half until blended smooth then add to your oysters & veggies
  • Reduce heat to low (almost simmering) and cook for about 5 minutes
  • Garnish with several crispy fried oysters on the top of each bowl
  • Enjoy!

    A shining recipe when I have a lot of oysters to use. Thank you. I added a little wine; and mushrooms instead of carrots. Also roasted ground almonds and coconut oil instead of coconut cream. I’m looking forward to making it again with roasted carrots, on hand after Christmas. Cayenne pepper instead of paprika. I also added olive oil and parsley. Thank you for sharing. It does indeed yield a yummy result.

    1. Update: I made the recipe again with carrots. I found it superior with the sweetness of carrots. The colour is better too. Thank you. A very satisfying dish.
