Instead of macaroni, we’re using fresh cauliflower florets and coating them in a creamy cheddar cheese sauce made with cottage cheese and half-and-half. The cottage cheese might sound unexpected, but once blended smooth it creates an incredibly creamy sauce without needing flour or a traditional roux.

And unlike many cauliflower mac and cheese recipes, you don’t need to roast the cauliflower first. The trick is to lightly steam it until just barely tender, rather than cooking it completely. Obviously, I’m not going to tell you cauliflower magically becomes macaroni. It doesn’t.

But cauliflower’s mild flavor works extremely well with cheese, and when the florets are cooked properly, they retain enough texture to give you a satisfying bite instead of turning into cauliflower mush.

For me, that’s the secret to vegetable swaps. I don’t need cauliflower to pretend it’s pasta. I just need the finished dish to be delicious enough that I don’t miss the pasta.

Ingredients You’ll Need

One of the best things about this low carb cauliflower mac and cheese is the relatively short ingredient list.

Fresh Cauliflower

I recommend starting with a large head of fresh cauliflower, cut into small, fairly uniform florets.

Keeping the pieces relatively small gives you a little cauliflower and plenty of cheese sauce in each bite—the closest approximation to the experience of eating traditional mac and cheese.

Fresh cauliflower also gives you much more control over the texture than frozen cauliflower.

Cottage Cheese

Cottage cheese is my secret weapon in this recipe.

Before you panic about cottage cheese curds in your mac and cheese, we’re putting it in the blender.

Once blended, cottage cheese becomes wonderfully smooth and creamy and creates the base of our cheese sauce without needing flour.

Heavy Cream

Heavy Cream helps thin the blended cottage cheese just enough to create a pourable cheese sauce while keeping everything rich and creamy. Use Half-N-Half, if desired.

Cheddar Cheese

Cheddar gives this casserole that familiar mac-and-cheese flavor we’re looking for.

I prefer shredding cheese from a block whenever possible. It generally melts more smoothly because packaged shredded cheeses can contain anti-caking ingredients.

Sharp cheddar will give you a stronger flavor, while mild cheddar makes the casserole a little more mellow. Use whichever you prefer—or combine the two.

Seasonings

A simple combination of dry mustard, white pepper, sea salt, garlic powder, and paprika gives the cheese sauce much more flavor than cheese alone.

Don’t skip the dry mustard. It’s one of those classic mac-and-cheese ingredients that doesn’t make the finished dish taste like mustard; it simply makes the cheddar taste even cheesier.

The Secret to Cauliflower Mac and Cheese That Isn’t Watery

If you’ve made cauliflower casseroles before, you’ve probably experienced the puddle of liquid that can mysteriously appear at the bottom of the baking dish.

The problem is usually overcooking the cauliflower before assembling the casserole.

Cauliflower contains a lot of water. If you boil it until completely tender—or steam it to the point that it’s already soft—it will continue cooking in the oven and release additional moisture.

For this recipe, steam your cauliflower for only about 5 minutes.

You’re looking for cauliflower that’s beginning to become tender but is still slightly crisp. Remember, it’s going to continue cooking when the casserole goes into the oven.

My Best Tips for Avoiding Watery Cauliflower Mac and Cheese

  1. Use fresh cauliflower. Frozen cauliflower generally releases more moisture as it cooks.
  2. Don’t boil it. Light steaming gives you much better control.
  3. Don’t over-steam it. Five minutes is plenty for small florets.
  4. Drain off any excess moisture. If your cauliflower seems wet after steaming, let it sit for a few minutes before adding the sauce.
  5. Keep your florets similar in size. They’ll cook much more evenly.

How to Make Baked Keto Cauliflower Mac and Cheese

Making this casserole is simple, but there are a few steps that make a big difference in the finished texture.

Start by cutting your fresh cauliflower into small florets and lightly steaming them until they’re just beginning to become tender. Resist the temptation to cook them completely.

While the cauliflower is steaming, blend the cottage cheese, half-and-half, and seasonings until completely smooth.

Transfer the blended mixture to a saucepan and gently heat it before stirring in the shredded cheddar. Keep the heat low while the cheese melts. High heat can cause cheese sauces to become grainy or separate.

For the best texture, I prefer making it no more than one day ahead.

When baking directly from the refrigerator, allow a little extra cooking time since the entire casserole will be starting cold.

If you’re using a crunchy topping, wait and add it immediately before the final uncovered portion of baking.

How to Store and Reheat Leftovers

Store leftover keto cauliflower mac and cheese in an airtight container in the refrigerator for up to 3 to 4 days.

For individual portions, reheating gently in the microwave works just fine. For a larger amount, cover the casserole and reheat it in a 325°F to 350°F oven until warmed through.

Avoid overheating leftovers. Just like any dairy-based cheese sauce, excessive heat can cause the sauce to separate.

Technically you can, but I don’t recommend it.

Blend the cottage cheese completely smooth. Nobody will know it’s there, but you’ll get all the creamy goodness it brings to the sauce.

Keep the heat low when melting the cheddar. Cheese doesn’t appreciate being blasted with high heat.

Shred your own cheese when you can. It melts better and gives the sauce a smoother texture.

Season your cheese sauce before baking. Cauliflower is mild and needs enough seasoning to stand up to all that dairy.

Let it rest before digging in. Giving the casserole a few minutes out of the oven allows the bubbling sauce to settle and cling to the cauliflower.

  • Preheat the oven to 350°F and butter a 3-quart casserole dish.
  • Fill a pot with about 1 inch of water and bring to a boil over high heat. Place the cauliflower in a steamer insert and place over the water. Cover with a lid and steam for about 5 minutes, or until cooked but still slightly crisp. (You do not want them soft and falling apart, as they will continue to cook when your casserole is baked). Transfer to a medium-size bowl.
  • In a blender, combine the cottage cheese, cream, and seasonings, and blend until smooth. Transfer the blended mixture to a medium size saucepan over low heat and bring to a simmer. Add the Cheddar, stirring continuously to melt. If the cheese sauce is not completely smooth, return it to the blender and blend until smooth.
  • Pour the cheese sauce over the cauliflower and toss to coat. Transfer to the prepared casserole dish. Cover with aluminum foil and bake for 45 minutes. Remove the foil and top as desired. Bake for an additional 5 to 10 minutes, until hot and bubbly.
