Ramp Rice
I love quick and easy recipes, Don’t you?? With the abundance of Ramps that mother nature provides in the spring, I try incorporate them into everything I can…… here’s a great way to take plain-jane left over rice and turn it into something spring-special!! (In case you aren’t familiar, Ramps are a wild leek and are super yummy!)
Here’s what you need:
- 2T Healthy Cooking Fat (My ultimate healthy whipped cooking oil blend, ghee, butter, coconut oil, etc)
- 1/4c Chopped Ramp Bulbs
- 1/4c Chopped Ramp Greens
- 2c Cooked Rice (I strongly urge you to try this rice, CLICK HERE, it’s our favorite!)
- Sea Salt and Pepper to taste
In a skillet over medium heat, sauté your chopped ramp bulbs in your healthy fat until soft. Add in your rice and season to taste with salt and pepper.. if your rice absorbs all of your healthy fat, add a little more…. when everything is heated and combined.. gently toss in your chopped ramp greens and ENJOY!
